  • 2 cups vegetable broth (or water)
  • 2 cans (15 oz each) black beans
  • 1/2 cup sliced green onion
  • 1 cup chopped cilantro

  • 1/4 cup olive oil + 1 Tbsp.
  • 1 shallot, minced
  • 1 Tbsp. honey
  • Salt and pepper to taste

Instructions

  2. In a large bowl, whisk together lime juice, olive oil, minced shallot, honey, salt, and pepper until emulsified.
  3. Drain and rinse black beans. Add cooled quinoa, beans, cilantro, and green onions to the vinaigrette; mix gently until combined.
  4. Chill in the refrigerator for at least one hour before serving for optimal flavor blending.
