Instructions

  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, sugars, eggs, oil, and vanilla extract until smooth. Gradually add the dry ingredients until well mixed.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla extract until smooth.
  5. Fill each muffin cup three-quarters full with batter, then top with about one tablespoon of the cream cheese mixture. Use a toothpick to swirl gently.
