  • 2 celery ribs, chopped
  • 4 garlic cloves, minced
  • 1 can (15 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 3 cups water
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 2 cans (15 oz each) cannellini beans, drained
  • 1 cup ditalini pasta
  • 2 cups chopped kale
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Add chopped onion, carrots, and celery; sauté until softened (5-7 minutes). Stir in garlic and cook for 1 more minute.
  2. Add crushed tomatoes, vegetable broth, water, bay leaves, oregano, and red pepper flakes. Bring to a boil then reduce heat to simmer.
  3. After 15 minutes of simmering, add drained cannellini beans and ditalini pasta. Cook for an additional 10-12 minutes until the pasta is al dente.
  4. In the last few minutes, stir in chopped kale until wilted. Mix in parsley and lemon juice; adjust seasoning with salt and pepper.
