  • 6 cups chicken broth
  • 34 tablespoons soy sauce or liquid aminos
  • 2 tablespoons sesame oil
  • 2 tablespoons rice apple vinegar (unsweetened)
  • 3 garlic cloves (minced)
  • 2 teaspoons ginger (fresh and minced)
  • 1 cup sliced shiitake mushrooms
  • ½ cup grated carrots
  • 1 pound beef belly (sliced into strips)
  • 6 oz ramen noodles

Instructions

  1. Heat a Dutch oven over medium-high heat and add olive oil. Sear beef belly strips until crispy on both sides (about 5-7 minutes). Remove from pot.
  2. Drain excess fat but retain about a tablespoon for flavor. Sauté garlic, ginger, carrots, and mushrooms for 3-5 minutes.
  3. Slowly pour in chicken broth while scraping up browned bits from the bottom of the pot.
  4. Stir in soy sauce, rice apple vinegar, and sesame oil. Cook uncovered for about 10 minutes.
  5. Add ramen noodles directly into the pot and cook according to package instructions until softened.
  6. Serve hot, topped with crispy beef belly slices.
