  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the overripe bananas thoroughly. Add canola oil, milk, both sugars, eggs, and vanilla extract. Mix until combined.
  3. Sift in plain flour, baking powder, and salt. Stir gently until just mixed; some lumps are okay.
  4. Pour the batter into the prepared loaf tin and bake for 45-55 minutes or until golden brown and a skewer comes out clean. Let cool in the tin for about 10 minutes before transferring to a wire rack.
