  • 1/4 cup honey
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup caramel sauce for drizzling
  • Additional chopped pistachios and walnuts for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together the softened butter and granulated sugar until light and fluffy. Add honey and mix well.
  3. In another bowl, whisk together flour, cinnamon, cardamom, and salt. Gradually fold this mixture into the wet ingredients along with chopped nuts until just combined.
  4. Roll dough into small balls and slightly flatten them on the prepared baking sheet.
  5. Bake for 10-12 minutes until golden at the edges. Allow cookies to cool on a wire rack.
  6. For the filling, beat the cream cheese and powdered sugar until smooth.
  7. Once cooled, spread cream cheese filling on one cookie's flat side and top with another cookie.
  8. Drizzle with caramel sauce and garnish with additional nuts if desired.
