  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz sliced mushrooms
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Microwave sliced mushrooms in a microwave-safe bowl for 2-3 minutes; drain excess liquid.
  3. Brush one side of each tortilla with olive oil and place oiled side down on a baking sheet.
  4. On half of each tortilla, layer half of the cheddar and mozzarella cheeses, followed by spinach and mushrooms. Top with remaining cheese and fold over.
  5. Bake for 6 minutes, flip carefully, then bake for an additional 6-7 minutes until golden brown and crispy.
  6. Allow to cool slightly before slicing into wedges.
