  • Orange peel (from 1 large orange)
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (preferably caster)
  • Additional sugar for caramelization
  • Fresh fruit or berries for decoration (optional)

Instructions

  1. Heat the milk: In a heavy-based saucepan, add milk, citrus peels, and cinnamon stick. Simmer gently, then remove from heat.
  2. Prepare cornstarch slurry: Mix cornstarch with a splash of water until smooth.
  3. Combine egg yolks and sugar: Whisk egg yolks and sugar until pale; add cornstarch slurry and a splash of hot milk to combine.
  4. Mix egg mixture with milk: Strain out peels from the milk; whisk in egg mixture gradually over low heat until thickened.
  5. Portion into ramekins: Divide custard among ramekins and cover each with plastic wrap before chilling in the fridge for about four hours or overnight.
  6. Caramelize sugar: Remove wrap and sprinkle sugar on top of the custards; use a blowtorch or broiler to caramelize until golden brown.
  7. Serve: Optionally top with fresh fruits before enjoying.
