  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 medium apples (peeled and cut into pieces)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9×4 inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one by one, mixing well after each addition. Stir in vanilla.
  4. Gradually mix in half the flour mixture followed by the buttermilk until combined; fold in remaining flour carefully.
  5. Toss diced apples with brown sugar and cinnamon; layer half the batter in the tin, followed by half the apple mixture. Swirl gently. Pour in remaining batter and top with apples.
  6. Bake for 55-65 minutes, covering with foil after 30 minutes to prevent over-browning.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
