  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • For caramel filling: ½ cup unsalted butter, 1 cup brown sugar, ¼ cup heavy cream, 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together softened butter and brown sugar until fluffy.
  4. Add eggs, apple cider, and vanilla to the butter mixture; mix well.
  5. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  6. Drop spoonfuls of dough onto lined baking sheets with space in between.
  7. Bake for 12–15 minutes or until edges are golden brown; cool on wire racks.
  8. For caramel filling: Melt butter in a saucepan, stir in brown sugar and heavy cream; boil for 3–5 minutes before adding vanilla and letting cool slightly.
  9. Assemble by spreading caramel on one cookie and topping it with another.
