  • 1 ½ cups brown sugar
  • ½ cup granulated sugar
  • 4 eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup apple cider
  • 2 cups apple cider (for glaze)
  • 2 tablespoons salted butter (for glaze)
  • ⅓ cup granulated sugar (for glaze)
  • 2 tablespoons demerara or turbinado sugar (for glaze)
  • 1 ½ teaspoons cinnamon (for glaze)

Instructions

  1. Preheat your oven to 350°F and grease a 12-cup bundt pan.
  2. In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg; set aside.
  3. In a stand mixer, cream butter with brown and granulated sugars until fluffy (3-5 minutes).
  4. Add eggs one by one, mixing well after each addition, then stir in vanilla extract.
  5. Gradually mix in dry ingredients alternately with apple cider until just combined.
  6. Pour batter into the prepared bundt pan and bake for 40-50 minutes until golden; cool for about 10 minutes.
  7. For the glaze, boil apple cider until thickened down to around one-third cup; stir in butter.
  8. Brush warm cake with glaze and sprinkle cinnamon sugar on top.
