  • 2 teaspoons apple pie spice
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder

  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted
  • ¾ cup granulated sugar for coating
  • 2 teaspoons ground cinnamon for coating
  • 1 cup powdered sugar for glaze
  • 12 tablespoons apple cider for glaze

Instructions

  1. Reduce apple cider in a saucepan until it measures ¼ cup; let cool.
  2. Brown the unsalted butter over low heat; cool to room temperature.
  3. Mix dry ingredients (flour, spices, baking powder, cornstarch, baking soda, salt) in one bowl and wet ingredients (brown butter, sugars, egg, cider, vanilla) in another.
  4. Combine wet and dry mixtures until just blended; refrigerate dough for extra chewiness.
  5. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Scoop dough onto the baking sheet; bake for 9-11 minutes until edges are set.
  7. Cool slightly before glazing: mix powdered sugar with additional apple cider and drizzle over cookies.
