  • 1 lb ground chicken
  • 1 Granny Smith apple, diced
  • 2 large sweet potatoes
  • 1/2 yellow onion, diced
  • 2 oz cheddar cheese, grated
  • Maple syrup
  • Olive oil
  • Spices: cinnamon, coriander, cumin, nutmeg
  • 1 egg
  • 1/2 c fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 1-inch piece of ginger, grated
  • 1 tsp soy sauce
  • 1 tsp salt
  • Freshly cracked black pepper and cayenne to taste
  • 2 Tb butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bake sweet potatoes for 60–75 minutes until soft.
  3. Sauté onion and apple in olive oil until softened; cool.
  4. In a bowl, mix ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, and pepper.
  5. Form into 14–16 meatballs and place on a greased baking sheet.
  6. Bake for about 15 minutes until cooked through.
  7. Mash baked sweet potatoes with butter, maple syrup, and spices until smooth.
