  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 medium Granny Smith apple, thinly sliced
  • 4 oz light Brie cheese, sliced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried thyme
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp creamy Dijon mustard
  • 1 tsp whole grain Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Use a sharp knife to slice each chicken breast horizontally, creating a pocket without cutting all the way through.
  3. Stuff each pocket with apple slices and Brie, then fold the chicken back over.
  4. Season the outside of the chicken with salt, pepper, and thyme.
  5. Heat olive oil in a large skillet over medium-high heat and sear each stuffed chicken breast for about 1-2 minutes on each side until golden brown.
  6. In a small bowl, mix maple syrup, creamy Dijon mustard, and whole grain Dijon mustard; brush the glaze over the tops of the seared chicken.
  7. Transfer to the baking sheet and bake for 20-25 minutes or until fully cooked.
