  • 1 pound ground beef
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup carrots (sliced)
  • 1 cup potatoes (diced)
  • 1 cup corn kernels
  • 1 cup green beans (chopped)
  • 10.5 oz cream of mushroom soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef with chopped onion and minced garlic until cooked through (about 6-8 minutes). Drain excess fat if necessary.
  3. In a mixing bowl, combine the cooked beef mixture with sliced carrots, diced potatoes, corn, green beans, cream of mushroom soup, thyme, parsley, salt, and black pepper. Stir until well mixed.
  4. Transfer the mixture into a greased casserole dish and top with shredded cheddar cheese.
  5. Bake in the preheated oven for about 30 minutes or until heated through and cheese is melted.
