  • 1 cup almond flour
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • ½ teaspoon almond extract
  • 2 eggs, room temperature
  • 1 cup water
  • ¼ cup granulated sugar
  • 4 tablespoons vanilla extract (alcohol-free)
  • ¼ cup sliced almonds for topping (optional)
  • ¼ cup powdered sugar for topping (optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Make simple syrup by simmering water and sugar until dissolved; stir in vanilla extract and cool.
  3. In a stand mixer, combine almond flour, all-purpose flour, salt, sugar, softened butter, eggs, and almond extract until light and fluffy.
  4. Slice croissants in half; brush inside with syrup. Spread almond filling on the bottom half and reassemble.
