Ingredients

Scale
  • 3 large eggs
  • ½ Tbsp sugar
  • 1 tsp usukuchi (light-colored) soy sauce
  • Pinch of salt
  • 1 Tbsp neutral oil (for cooking)

Instructions

  1. Crack the eggs into a mixing bowl. Add sugar, soy sauce, and salt. Whisk until frothy.
  2. Heat your tamagoyaki pan over medium heat and coat it with neutral oil.
  3. Pour one-third of the egg mixture into the pan, swirling to cover evenly. Cook until set but slightly wet on top.
  4. Roll the omelette from one edge to the other using a spatula, then push it to one side of the pan.
  5. Repeat with more egg mixture, lifting the rolled omelette so uncooked egg flows underneath. Continue until all mixture is cooked and rolled.
  6. Transfer to a cutting board to cool slightly before slicing.
